Easter Cupcakes

Easter desserts are some of my favorite desserts to make because Resurrection Sunday is one of my favorite days of the year. There is something so special about celebrating the resurrection of Christ with your Christian brothers and sisters.

These cupcakes are such an easy Easter dessert to make too, even if they look bakery-worthy. I love this basic vanilla cupcake recipe by Williams Sonoma. I always use their recipe as the base for my cupcakes. You can easily spice up this simple recipe with things like flavored icings, unique fillings, and festive toppings.

Starting left to right, the first cupcake is a basic vanilla cupcake with vanilla bean icing. I use this recipe for the vanilla icing, but use Vanilla Bean Paste to add a little something exta.

The middle cupcake is a basic vanilla cupcake with the same vanilla bean frosting, but with a lemon curd center. I inject the cupcake with a bit of store bought lemon curd. For my Ohio friends, Dorothy Lane Market has some great options. For my Texas friends, World Market, Central Market, & HEB have great options. You can also make your own if you have extra time and motivation. I do love this recipe.

The final cupcake (far right) is a basic vanilla cupcake with vanilla bean frosting, topped with toasted coconut and, everyone’s favorite, Cadbury mini chocolate eggs. Just toast some coconut shavings on a baking sheet at 375 for 2-3 minutes. Keep a close eye on them and remove them when they are a nice golden brown. Then, top your cupcake with 2-3 Cadbury eggs. It’s really that simple!
